CRISPY PLANTAIN BAJJI: A SWEET AND SAVORY DELIGHT

Plantain bajji is a delectable deep-fried fritter recipe featuring raw banana or plantain, offering a delightful blend of sweetness and savory flavors in every bite. Typically enjoyed during the monsoon and winter seasons, this popular snack is served with refreshing dips like pudina and coconut chutney across India.

The batter for plantain bajji is simple, requiring besan flour, water, sodium bicarbonate, garlic, asafoetida powder, red chilly powder, and turmeric powder. Sieve the besan flour and mix it with water to achieve an idli batter-like consistency. A pinch of sodium bicarbonate is added to help the fritters puff up. For added flavor, ground garlic water, asafoetida powder, red chilly powder, and turmeric powder are included. A dash of red food color can be added for vibrancy.

To prepare the plantains, simply cut off the top and bottom without peeling the skin. Slice the plantains using a bajji slicer or a sharp knife, discarding the first slice.Heat groundnut oil in a deep frying pan and coat the plantain slices in the batter before carefully dropping them into the hot oil. Fry the bajjis on medium heat, ensuring they cook evenly without burning.
